It’s Christmas season and it reminds me of fruitcake. And I came up with this idea of making mini fruitcakes to sell at church cafe on Christmas services. I started with searching and compiling fruitcake recipes, with some modification, voila! I have my fruit cupcakes done.

It was my first attempt, and even though the flavor wasn’t that perfect yet I felt very satisfied with my first go. I’d figured out what to put in the next time.

This weekend is Dark Chocolate and Almond Cupcakes for my baking. As usual after work I had to rush home to get into action. It took me 5 hrs to make about 40 of them.
First I had to toast the almonds and put them aside. Then I mix the cupcake mixture and bake them. And lastly to put the dark chocolate frosting followed by sprinkling some almond flakes on top. Voila!

Do you know that white chocolate is technically not a chocolate? White chocolate consists of cocoa butter, milk and sugar. It does not contain cocoa solids. That’s why it cannot be officially called chocolate.

This week I have tried baking new cupcakes. They are the wonderful Blueberry and Lemony cupcakes and Fruitburst cupcakes.

I personally think alittle hint of lemon would be good in a cupcake with some lovely blueberry marbled on top. From the top it looked really nice.
As for the Fruitburst Cupcakes, they are packed with Cranberries and Raisins to give the fruity sweetness in these cupcakes. Cranberries are expensive over here in this part of the world. And the rich deep red color is very appealing.
Cranberries are a source of antioxidants and phytochemicals that may reduce urinary tract infections commonly in females and as anti-cancer agents. Cranberries are rich in Vitamin C, dietary fiber, and dietary mineral.
As for raisins, they are actually dried grapes. Raisins are sweet due to its high content of fructose, a type of simple sugar, and they are also high in antioxidants qualities.
